CRISPY PRAWNS

It’s Friday and its another starter recipe for those of you planning dinner parties this weekend! This was certainly quick, easy and yum! Be sure to try this recipe and let me know what you think!

Whatll you’ll need

  • 2 cups of Bread Crumbs
  • 2 large eggs
  • 1 cup of Flour
  • 1 ounce of Large King prawns
  • Spices (All purpose, salt, black pepper, garlic, ginger & paprika)

 

Process

Step 1; Defrost the prawns, wash them and set aside. In a bowl, pour in a cup of flour and add in all your spices to it. In another bowl, crack in 2 eggs and whisk. In a third bowl, pour in the breadcrumbs.

Step 2; Evenly coat the prawns in the batter mix, then coat it with egg and lastly coat it with breadcrumbs. Repeat this on all the prawns and set them aside for frying.

Step 3; Heat up some oil in a deep frying pan. You’ll need to set you cooker at medium heat to allow the prawns cook all the way through. Place the prawns into the pan and allow to fry for 5 minutes. Make sure to flip the prawns every minute so it doesn’t burn. And there you have it! I like to serve with a spicy homemade sauce, however you can use any sauce of your choice.

POTATO CAKES

Do you have leftover mashed potatoes from last night? well.. I have the perfect recipe to transform them into the most delicious cakes that are perfect for a quick breakfast. I will also be sharing my mashed potato recipe here! I know everybody has their own way of preparing this, so you can easily skip to the third step of the recipe. But, if you have never made them or would like to follow mine… I have got you covered! let’s get started

 

What you’ll need;

  • 800g potatoes
  • 50g unsalted butter
  • 90g cheddar cheese
  • 1/4 cup chives
  • 1/4 cup milk
  • 2 tbsp flour
  • Breadcrumbs
  • 2 eggs
  • vegetable oil

 

Step 1: peel the potatoes, cut them into quarters and give them a quick rinse. place them in a pot of cold water, season with salt and bring them to a boil. once it’s boiling, reduce to medium heat and allow to simmer until tender. This should take about 10 minutes

Step 2: Drain the potatoes in a colander and place them back into the pot. using a potato masher or spatula, mash the potatoes to a nice creamy consistency. Add in the butter, cheese, chives and milk, and mix thoroughly with a spatula. That is your cheesy mash potato ready!… Then add the flour, mix together and set aside ready for the next step

Step 3: In a bowl, crack the eggs and whisk lightly. In another bowl pour some breadcrumbs and you might have to refill the bowl depending on how much you use. At this point measure out equal sizes of mashed potatoes ( Hint: I used an ice cream scoop to ensure the sizes were even), and place them aside

Step 4: Place a portion of the mashed potatoes on your palm and flatten out to your desired shape and size, dip this in the egg mixture and cover with breadcrumbs. Repeat this process for the rest of the mashed potatoes.

Step 5: In a frying pan, add some oil( to cover the bottom of the pan) and allow to heat up on medium to high heat. Cook for about 4 minutes on both sides or until it is nice and golden brown. SWEET POTATO BITES WITH AVOCADO AND BACON

Personally, I don’t think there is anything in the kitchen that feels as good as transforming simple ingredients into a delicious dish. I got that feeling after I made these mouth-watering potato bites a few weeks ago. I’m not sure If I’m the only one obsessed with sweet potatoes and bacon, but anytime I’m deciding on what pub to eat at, I always look out for sweet potato fries on the menu…..and is your breakfast really complete without crispy bacon?! In this recipe, I seasoned my sweet potatoes with paprika, thyme, salt and pepper…. but that’s just me playing with what I had in my cupboard and it turned out amazing.. so please use whatever you wish, seasoning is up to you. Let’s get started.

What you’ll need:

1 tbsp paprika
1 tbsp thyme
1 lime
1 large sweet potato
1 avocado
Bacon
Salt and pepper
Olive oil

Steps

  • Start off by rinsing your sweet potato (if you want to leave the skin on like I did, ensure you clean properly), then dry with a paper towel. Slice them into about 1/2 inch slices and toss into a bowl.
  • Add a drizzle of olive oil, paprika and thyme to the bowl of sweet potatoes and mixed together, ensuring that each slice is coated. At this point, arrange the slices on a greased baking tray and drizzle some more olive oil and season lightly with salt and pepper. Allow to bake in a preheated oven at 180oC for about 25 minutes, then flip them over and allow to bake for another 15 minutes.
  • While the sweet potatoes are cooking, you can cook your crispy bacon… add your slices of bacon on a cold pan and turn heat to medium-low. Allow to cook for about 15 minutes while constantly turning it over to ensure that you are cooking both sides evenly.
  • In another bowl, place the avocado, squeeze some lime juice and season with salt and pepper. Mix this together until the avocado is nice and creamy.

Mango Popsicle

It’s Mango season in Nigeria so this is the perfect time to get ripe juicy mangoes. You can make this for your kids or whomever! Its hassle free and as refreshing as ever.

You’ll need

  • 10 Large mangoes
  • 1 Lemon
  • 1/4 Cup of Orange juice
  • popsicle mold

Directions

  • Cut the mango into cubes and allow to freeze overnight. Place the frozen mango cubes into a blender, squeeze in the juice of a lemon and pour in the orange juice. Blend until it becomes a thick smooth puree.
  • Pour the mango puree into the popsicle mold and freeze overnight. Then pull out the popsicle gently, and there you have it!
  • P.S you can add add any fresh fruits to your popsicle mold.

YAM PORRIDGE

I really only like my yam fried but I can make an exception for Asaro. This is a very popular Nigerian yam dish also known as yam porridge. I was really missing home and this recipe jumped straight into my head. This recipe is pretty straight and with only a few ingredients, you can achieve this amazing comfort meal. I have added some chicken breast to this recipe, this is completely optional and can be replaced with anything else you might prefer.

what you’ll need:

  • 1 1/2 pound of yam
  • 4 tomatoes
  • 2 onion
  • 3 garlic cloves
  • 1 scotch bonnet
  • 2 chicken breast
  • chicken stock
  • vegetable oil
  • 2 tbsp crayfish
  • 1 knorr cube
  • salt and pepper

Procedure:

Step 1: firstly, you would need to prep your yam by peeling the skin off, cutting into chunks and then rinsing them. After this, place the yam in a bowl of water, and set aside. This will prevent them from browning.

Step 2: Heat up some vegetable oil in a pan and while that’s heating up, blend the tomatoes, 1 onion, garlic, and scotch bonnet together in a blender. When the oil is hot, add the blended mixture and allow to cook for about 25 minutes.

Step 3: While that is cooking, in another saucepan; pour some chicken stock and place the 2 chicken breasts into the stock and allow to cook for about 25 minutes.

Step 4: Heat up some oil in a pot, add one roughly chopped onion, the crayfish and the blended mixture( from step 2). Add the Knorr cube, salt and pepper and allow to cook for about a minute or so while stirring. At this point add the yam and some chicken stock and allow to cook until the yam is cooked.

HOMEMADE PIZZA

I’m amazed at how incredibly easy it was to make this! Literally cannot wait to make this a Saturday night staple at home when I have kids!… and the best part is you can always change the toppings. It’s like having ice cream with a different topping each time! I love it! I’ve always dreamt of having one of those homes where everything is homemade and I love that this recipe brings that to life. I hope you enjoy making this half as much as I did!

 

You’ll need:

  • 2 ½ Cups of flour
  • 1 tsp. of Salt
  • 7g of Yeast
  • 1½ cup of Warm water
  • 3 tbsp. of Granulated sugar
  • 1 tbsp. of Olive oil
  • Some Italian herbs and spices
  • A 12” pizza pan
  • 1 tin of Dolmio sauce or Chopped tomatoes
  • Scotch bonnet peppers
  • Chopped onions
  • 1 garlic clove
  • Mozzarella cheese
  • Toppings (Chicken breast, Sausages, Bacon, Green peppers, sweet corn)

Let’s proceed;

Step 1: You want to start by preparing your tomato sauce. Chop some onions, garlic and scotch bonnets into small bits so they disappear into the sauce. Pour 2 tbsps. of olive oil on a pan, throw in the onions, garlic and scotch bonnets, fry this for a minute then add the tin of Dolmio sauce or tin of chopped tomatoes. Let this cook for about 5 minutes on low heat until it reduces to a nice thick tomato sauce then add some Italian seasoning and salt to it. Set this aside

Step 2: Prepare your toppings (You can use any toppings you want in this recipe, I’ll be using Chicken breast, Sausages, Bacon, Green peppers and Sweet Corn). Cut the chicken breast, bacon, sausages and green peppers into small pieces. Lightly season the chicken breast slices and fry them in a greasy pan until its done. Set this aside and fry the bacon and sausages till its crispy. Your toppings are ready!

Step 3: Now its time to prepare your pizza dough. I’ll be using a stand mixer but you can use your hand to mix this dough. Start by activating the yeast. Pour 2 spoons of sugar into some warm water and pour in a sachet of yeast into the water. Stir and cover it. In about 2 minutes your yeast should be activated. Pour this in a bowl and add in the flour, salt, 1 tbsp. of sugar, 1 tbsp. of olive oil, Italian seasoning, and mix this altogether. Knead the dough on a floured surface. Make sure your hands are glazed with olive oil while you’re doing this, It makes it super easy to knead. Spread the dough thinly around the pizza pan. Cover with Cling film and leave for 20 mins to rise.

Step 4: Its time to assemble the pizza! Preheat the oven to 220degrees. Start by spreading the tomato sauce all around the pizza base, then grate the mozzarella cheese all over and then ofcourse all the pizza toppings. Bake in the oven for 15minutes. And it’s done!

STUFFED BEEF ROLLS

looking for something quick and still want to impress your guest? I have the perfect recipe for you. These stuffed beef rolls are not only quick, but they are sooo tasty and look really great. I have stuffed my beef with some peppers, onions, garlic and cheese, but feel free to play around with the ingredients! But I promise you won’t be disappointed using the ingredients listed below.

What you’ll need

• 1/2 Red bell pepper

• 1/2 Yellow bell pepper

• 1/2 tsp salt

• 1/2 tsp pepper

• I/2 White onion

• 3 Garlic Cloves

• Spinach

• Mozerrala cheese

• 5 Thin cut beef steak

• Vegetable oil

Procedure

1. Chop all ingredients (except the beef steak of course). Heat up some vegetable oil in a pan and add all the chopped ingredients. Stir together, season with the measured salt and pepper and allow to cook for 3-5 minutes

2. Place your beef on a flat surface and season both sides of the beef with salt and pepper

3. Place some spinach on the beef, follow with some of the cooked vegetables from Step 1 and finish with some mozzarella cheese. Carefully Roll the stuffed beef and secure the roll with a skewer at several points. At this stage, cut the roll into several smaller rolls (like in the picture) and set aside.

4. Heat up some oil, place the stuffed rolls in the pan and allow to cook on both sides until you achieve your desired result (medium rare, medium….. ). Remove the skewer and serve. Enjoy!

Pina Colada

The most refreshing cocktail in my opinion! It gives me major Tropical beach vibes 🙂 and I love how easy this recipe is…. and chances are you already had all the ingredients in your fridge so no need to go shopping. If you’re having a dinner party and you want to impress your guests try this!

 

You’ll need:

  • ½ Cup of Ice Cubes
  •  1 Cup of frozen or fresh pineapple chunks
  •  1 Cup of Coconut Milk
  •  1 tablespoon of lime juice
  •  1 whole pineapple for serving (Optional)

 

Directions:

  • Cut open the pineapple and take out all the fresh juicy insides and you’ll be left with a bowl shaped pineapple shell. Put this in the freezer while we prepare the Pina Colada.
  • The rest is easy! Put all your ingredients in a juice blender and whiz whiz whiz until you get a smooth consistency.
  •  Pour the drink into the frozen Pineapple shell for an extra chilled goodness! If you want to turn this into a Cocktail simply add 1 ounce of white rum….I hope you enjoy this recipe…..

Beef Chilli

I realised that I always either have white rice with tomato stew or white rice with chicken curry sauce (recipe coming soon!) so i decided to switch it up this week with my version of beef chilli sauce! It may seem like a lot of ingredients listed below but I reckon you’d have most of them already in your pantry and they are regular produce that can be found in every grocery store. The flavours work perfectly together and this sauce might actually be my new tomato stew looool!. In order to avoid any confusions I decided to break the ingredient list into 4 parts, one for each step of the recipe.…I hope I did a good job with making this recipe as clear as possible. Please feel free to drop any questions in the comment section below! Okay lets get into the recipe.

What’ll need

Step 1:

  • 400g diced beef
  • 1/2 large onion (chopped)
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon all purpose seasoning
  • 1 Knorr cube
  • Salt to taste

Step 2 (all chopped)

  • 2 Onions
  • 1/2 inch ginger
  • 2 cloves of garlic
  • 1 scotch bonnet
  • 3 green chilli
  • 1/2 green bell pepper
  • 1/2 tablespoon soy sauce
  • vegetable oil

Step 3:

  • 1 teaspoon chilli powder
  • 2 tablespoon ketchup
  • Vegetable oil

Step 4:

  • Cornflour

Procedure:

Step 1 : In a pot, add the deef, chopped onions, curry powder, all purpose seasoning, knorr cube and salt. Allow to cook on medium heat for about 20 minuets . After 20 minuets, remove from heat and set aside (Keep the beef stock).

Step 2: Heat up some vegetable oil in a pan, then add all the vegetables listed above and allow to cook for about 2 minuets(ensure you stir occasionally). Add the soy sauce and allow to cook further for a few seconds then set aside.

Step 3 : In another pan, heat up some vegetable and add the cooked beef and chilli powder. allow to fry for a few minutes, then add the ketchup and mix throughouly. at this point you want to add all your vegetables from step 2 to the pan and mix thoroughly. Add some (not all) beef stock to the mixture and stir.

Step 4 : Mix the rest of your beef stock and some corn starch together in a bowl and add to the pan. Throughly combine all the ingredients together and allow to simmer for about a minute or so. And it’s ready! You can serve with plain white rice.

CRISPY COCONUT CHICKEN

I was going away for the weekend and realised I had some boneless chicken breasts in my fridge that I didn’t want to come back to. I definitely had to try something new, quick and easy. I really didn’t take any measurements for this recipe because I honestly didn’t think I would share it here, but it turned out really good so I decided to put it up for you guys! I remember I had four chicken breasts, a bowl with the wet ingredients (eggs and buttermilk) and a separate bowl with the dry ingredients (breadcrumbs and coconut flakes).

What’ll need:

Boneless chicken breast

Buttermilk

Salt

Pepper

2 large eggs

coconut flakes

bread crumbs

vegetable oil

Procedure;

Step 1: Slice the chicken breasts, season them (I only used salt and loads of pepper for mine) and set aside.

Step 2: Crack the eggs in a bowl and add some buttermilk (maybe 2 cups will do). Mix together and set aside. In a separate bowl add some breadcrumbs and some coconut flakes. Make sure you have way moreeee of coconut flakes in the bowl.

Step 3: Heat up some vegetable oil in a deep fryer or deep frying pan to 160oc. Make sure the oil isn’t too hot to ensure that the chicken is thoroughly cooked.

Step 4 : Dip the chicken in the egg and milk mixture, then completely cover the chicken in the breadcrumbs and coconut flakes mixture. Place this in the pan to fry for a few minutes and allow to cool before serving.

Breakfast Burger

The key to making your burger absolutely delicious and authentic is to not complicate things. You want to keep the flavours light and fresh so that they come together seamlessly to give that divine taste that’s to die for. When I think of the perfect burger I think about a BYRON burger. Perfectly crafted mouth-watering goodness! That’s what we’re going for!

You’ll need:

• 1 large egg
• Salt
• Black pepper
• All purpose seasoning
• Fresh tomatoes
• Sliced cucumbers
• Lettuce
• 1 slice of smoked bacon
• Ground beef / Beef Patty
• 1 slice of cheddar cheese
• Burger bun/ English Muffin
• Ketchup
• Mayonnaise

Directions;

1. Lightly season your ground beef with salt and pepper and a drizzle of all-purpose seasoning. Alternatively, you can get store bought beef patties that are ready to be grilled… this would save you time. Place your beef patty on a greasy grill pan and flip it every 2 minutes until it’s done.
2. Fry the smoked bacon and place on a kitchen towel, then fry the egg into a sunny side up, you want to get a runny yolk so try not to over cook this. Set this aside. In a bowl mix ketchup and mayonnaise and a bit of pepper until you get the perfect lump free consistency.
3. Slice some tomatoes and cucumbers and set aside. Now for the final step, Toast the burger buns on each side, then layer all your ingredients however you like. I like to serve this with some side fries as is customary ☺ but this is totally up to you! I hope you enjoy!

SCOTCH EGG

This isn’t something I usually crave but once in awhile I do crave scotch eggs and because it is such an easy and fun dish to prepare, I decided to share this recipe here. This recipe serves 7, but feel free to double/triple the measurements for more!

what’ll need:

  • 454g sausage meat
  • 7 large eggs (boiled)
  • 1 large egg (lightly beaten)
  • All-purpose flour
  • Breadcrumbs
  • 1/4 teaspoon chilli powder
  • 1/4 teaspoon ground nutmeg

Procedure:

Step 1: In a bowl, mix the sausage meat, chilli powder and nutmeg together.

Step 2: Flatten a generous amount of sausage meat on your hand (it is best to do this with your hands wet to avoid any stickiness). Then ensure that the egg is completely covered with the meat.

Step 3: Coat the sausage meat with some all-purpose flour, dip this in the beaten egg and then fully cover this with breadcrumbs.

Step 4: Heat some oil in a deep fryer/deep frying pan to 160oC. Cook the scotch egg for about 5-10 minutes or until you get your desired colour. Gently turn the scotch egg while it’s cooking to ensure it is evenly cooked

Step 5: Allow to cool for about 2 minutes before serving
